Black Bean Soup

  • 1 C. Dry Black Beans
  • 2 Cloves Garlic
  • ½ Large Onion
  • Small Bunch Cilantro
  • Lime Juice
  • 1 Avocado
  • Salt and Pepper
  • 1 Pepper (hot or mild)
  • Handful of Spinach


Soak beans for 8 hours (or one hour with boil soak method), cook for 2 hours with a little oil and no salt. (Salt makes them hard oil makes them mushy). Remove from liquid reserving it and mash the beans completely. Mix beans and cooking liquid together and bring to a simmer. Sauté onion, garlic, and pepper, then add to the pot. Simmer for 30 minutes. Add avocado (mashed) in the last five minutes of cooking. Add spinach and cilantro leaves in the last one minute of cooking. Turn off and add salt and pepper.
