Squash Soup

  • 3 C. Cubed Winter Squash
  • 1 Small/Medium Onion (slice onion four times one way and four times crossways so that it opens up but stays connected at the bottom)
  • 1 Clove Garlic

Boil these three with just enough water to cover, with a pinch of salt.

  • 1 Pablano Pepper
  • 1 Clove Garlic (unpeeled)

Roast these in the over under the broiler, remove skin.

  • 2 C. Coconut Milk

Put all ingredients in a blender. Blend until smooth, add salt and black pepper. Add fresh cilantro after blending.
