Black Beans and Rice

  • 1 C. Dried black or red beans
  • ½ of a small onion
  • 2 cloves garlic
  • Small bunch of cilantro
  • 1 bell pepper
  • 8 oz spinach

Soak beans over night. Boil for 2 hours on med low with a few cumin seed. Sauté veggies and minced cilantro stem until mostly cooked. Add beans and some liquid and simmer with some salt. After 5 minutes add spinach and cilantro leaves. Turn off and let steam for a few minutes then stir. Serve over rice.
