Chickpea Burgers

  • 1 C. Chickpeas
  • 1 Small Onion
  • 1 Jalapeno
  • 2 Cloves Garlic
  • Small Bunch of Parsley
  • Cumin
  • Salt
  • Black Pepper
  • 1 Tsp Soy Sauce
  • 1 C. Flour

 

Pulse all ingredients other than chickpeas and flour in a food processor. Add chickpeas and pulse until just before pureed. The consistency is very important, you want it to be totally minced but not pureed. Add flour and mix well. Make into patties, you can make extras and they freeze well. Pan fry with a little oil. Can also be made into balls for meatballs and seasoned with Italian spices.
