My Cajun dad helped me create this recipe when he came to visit.

Serves 4

  • 1 package Tempeh or two portabella mushroom
  • 2 Cloves garlic
  • 1 Small onion
  • 1/2 Red bell pepper
  • 1 Stalk of celery
  • Tomato (optional)
  • Green onion
  • Olive oil
  • Salt
  • Pepper
  • 4 C. Veggie stock
  • 2 C. Brown rice

Put oil in a large hot pan. Cook garlic, peppers, onions, and tempeh (or mushrooms). Add rice and stir it to roast it for several minutes and then add the broth. Cook for 45 minutes then add green onions (and tomato if used), stir. Turn off heat and add ½ tsp salt. Stir and let sit for 5 minutes and serve.
