Katie’s Chili

  • 1 C. Beans (1/3 cup of 3 kinds, like black, kidney, and pinto)
  • 1 Jar strained tomatoes (or 5-6 med. tomatoes steamed for 1 min, peeled, and crushed)
  • 1 Small onion
  • ½ Bell pepper
  • 2 Cloves garlic
  • Jalapenos or other peppers (optional)
  • 1 Tbsp molasses
  • Black pepper
  • Chili Powder
  • Paprika
  • 1 Tbsp Lemon or Lime juice
  • Salt
  • Fresh Cilantro Leaves


Soak beans over night. Boil beans for 2 hours with a little cumin seed (and Kombu optional). In a hot skillet sauté onion, peppers, and garlic in a little bit of oil. Add tomatoes and beans and bring to a simmer. Add all but the last two ingredients. Simmer for 30-45 minutes. Turn off and add salt and cilantro leaves and stir.
