Pasta Salad

  • 1 lb Chunky pasta (ie: bowties, spirals, shells etc.)
  • 1 C. Broccoli Florets                      1/4 C. Tahini
  • ½ C. Chopped Onion                   2-3 Tbsp Olive Oil
  • ½ C. Green Peas (frozen)           ½-1 C. Vinegar (any type)
  • ½ C. Sliced Fresh Basil                 Salt and Pepper to taste
  • ½ C. Sliced Fresh Button Mushrooms
  • 1 Large Tomato, seeded and chopped
  • 1 Avocado, diced
  • (Any other veggies or herbs you like!)

Cook pasta according to package and add broccoli in the last 2-3 minutes of cooking. Drain and spread out on a cookie sheet to cool. Add frozen green peas to the hot pasta to warm up. Chop all other ingredients and mix with the pasta. Add dressing, stir, and refrigerate for 30 minutes or more.
