Refritos

This is our rendition of the re-fried bean. Also, our favorite thing to smear on tortillas.


  • 2/3 C. Lentils
  • 1 Tbsp Cumin Seed
  • 1 in strip Kombu
  • ½ C. Onions
  • 3 Cloves garlic
  • Any other veggies
  • Chili powder
  • Black pepper
  • ½ Tsp Salt
  • 1 Tbsp dry oregano
  • Fresh cilantro
  • Tortillas

Cook lentils until soft with the Kombu and cumin.

While the beans are hot mash them to a paste adding water as needed.

Set beans aside and sauté onions, garlic, and other veggies until onions are translucent. Mix a little water with the mashed beans to make them slightly runny (soupy) and add them to the skillet.

Add chili powder, black pepper, and salt. When it thickens some, add freshly ground oregano. Let it simmer until it re-thickens, turn off and stir in more salt to taste, and fresh cilantro leaves. Let it sit for 5 minutes, and then serve on tortillas.
