Cooked Kale “Salad” over Rice

I decided to do some experimenting in the kitchen today and this is what I came up with.

  • 1 bunch flat leaf kale (leaves separated from the stem)
  • 1/2 of a large red onion (cut into thin inch long slices)
  • 1/2 of a daikon radish (julienne)
  • 1/2 c frozen corn
  • 1/4 c hemp seeds
  • 1/4 c dried cranberries (or other fresh or dried fruit)
  • dash of mirin
  • cilantro leaves

Slice kale stems diagonal and add them to a hot skillet with olive oil cumin seed and black pepper with the onion and daikon. Saute until almost done and add the corn, cranberry and kale leaves. Add a few dashes of mirin and stir. Let cook stirring occasionally until kale leaves wilt. Add fresh cilantro leaves and salt to taste. Serve over rice.
