White Bean Dip GF

Had the desire to make a dip for snack today. We had two fresh loaves of sourdough bread begging for something to be used with. I found a few recipes for ideas and this is what I came up with.

  • 1 c. dry white beans
  • 1 tbsp miso
  • 2 gloves garlic
  • 1/4 c. olive oil
  • 2 tbsp lemon juice
  • 1/2 tbsp red pepper flakes
  • 1 tbsp thyme
  • Black pepper
  • Salt

Soak beans for 8 hours, or one hour using the boil soak method. Cook beans for one to one and a half hours with a one inch strip of kombu. When the beans are soft turn them off and add miso to their pot or bowl keeping any liquid left from cooking. Let sit for as long as needed, I let mine refrigerate until the nest morning. Strain the beans from their liquid, saving whats left and put all ingredients into the blender and blend until smooth adding more liquid as needed.

Serve with crackers, crusty bread or veggies!
